Bosko's Trattoria is an Italian restaurant that opened in Calistoga in March 1983 under the name Bosko's Pasta Deli. Back then, founder Jon Seeger's main goal was just to make fresh pasta and killer espresso. But as the business evolved, so did the menu -- into the kind of authentic, fresh Italian cuisine that makes eating out a joy for the senses. Today, three decades later, Boskos is still all about freshness.
