Located in the Adelaide Hills we produce a range of high quality, small batch spirits & aperitifs using a self crafted column and basket still.
At The Adelaide Hills Distillery, we self crafted a column and basket still specifically for high quality small batch spirit production. This ensures that our carefully selected botanicals are extracted by only the purest alcohol vapours.
Our first small batch product was the 78 Degrees Gin, the namesake paying homage to our distilling, with temperatures of distilling never exceeding 78.1°c. This gentle extraction allows for the retention of delicate aromas and flavours and results in a complex and structured gin that is cut with pure Adelaide Hills water. Perfect for a refreshing gin and Tonic with a citrus twist or served neat over ice.
Most recently our small batch portfolio has added The Italian Bitter Orange Aperitif and The Gunnery White Spiced Rum, both Australian small batch expressions of classics, that use native Australian traditional botanicals.
