Why the name, 7 Monks Taproom?
Trappist beer are ales brewed by or under control of Trappist monks. Yes, we said monks. There were a total of 174 Trappist monasteries worldwide (as of April 2011); only seven (six in Belgium and one in the Netherlands) produced Trappist beer and were authorized to label their beers with the Authentic Trappist Product logo. Hence the name during 2011 when we first opened.
We love beer. Our beer flows from 46 taps and our ever-changing bottled beer selection. We consistently serve seasonal craft beers from Michigan and around the world.

Bonobo Winery located at 12011 Center Road, Traverse City, Michigan and within ten miles of downtown Traverse City is the ninth and newest winery on the very popular Old Mission Peninsula Wine Trail. Bonobo Winery is a one-of-a-kind, experience-rich purveyor of artisan wines. The tasting room and processing facility opened in December of 2014. Wines are estate-grown and made on site; they will be high quality and limited in quantity.

The brew house is an engineered mix of new and old technologies and techniques. Whole ingredients are used with traditional brewing equipment which is controlled by state of the art systems that manage temperature throughout the brewing process. These same systems harvest waste BTU's, capturing the energy that would normally be lost and reusing it to preheat ingredients, maintain product temperatures, and even heat the taproom via an in-floor heating system. Waste materials such as process water and spent grain are also captured and stored for fertilization and irrigation of our crops.

OUR STORY:
Cultured Kombucha began while adventuring in the mountains of Nepal. We stumbled upon a monastery where we fell in love with the fermented potion called Kombucha. We watched the celestial virgins harvest the sacred tea by the light of a full moon. The monks then blessed these leaves with tears as they rolled them into beads of joy. We sat in silence for ten days and watched their hard work ferment, while being taught their virtuous practices.
